CHINESE CUISINE

Chinese cuisine, like the country itself, as marked by diversity and variety - and that's understating things. With its thousand-year-old history, Chinese civilization gave birth to eight great cooking traditions. of course, this doesn't even include the other cooking schools (Beijing and Western) and those that developed overseas.

It is quite difficult to categorize local Chinese cuisine vis-a-vis any particular tradition. Nonetheless, the Cantonese, Szechwan, and Fuijan traditions have been singled out as the three most important traditions to affect the development of Chinese cooking.
