THAI CUISINES

As distinct as its culture is the cuisine of Thailand. As any student of Thai culture knows, the cookery of Thailand seeks to balance five fundamental flavors: hot, sour, sweet, salty, and bitter.

Although it is popular to assume that there is only one Thai cuisine, it is probably better understood if viewed as evolving from four regional cuisines: North Northeastern (Isan), Central, and Southern. Although at first glance Thai cuisine may seem distinct, it actually shares a lot with the cuisine of Southeast Asia with its use of fiery chillies, coconut, herbs, and spices.
