Apple Crepes


Ingredients:

1 pc crepe wrapper

For the filling:

1 lemon, juice only
1/4 kg apples, peeled, quartered, and sliced
1 tbsp raisins
1 tbsp almonds, toasted
2 tbsp brandy
1 tsp sugar

For the sauce:

1 tsp sugar
1 tbsp butter
2 tbsp sherry or cooking wine reserved liquid (from the filling)

Preparation:

1. heat the juice of a lemon in a pan and melt 2 tbsp of butter in it. Poach the apples in the lemon and butter. Add the raisins, almonds, sugar, and lace with brandy. Reserve some of the liquid for use in the sauce.

2. To prepare the sauce: Melt 1 tbsp of sugar in 1tbsp of butter. Pour in the reserved liquid. Add the sherry (or cooking wine).

3. To serve: Place the crepe on a plate. Add the apple filling and fold the crepe. Pour in the sauce.
